1.053 OG – 1.012 FG – 26 ibus – 5.4% abv. – 26 ebc – 90 minute boil – 65 liters
Hops
- 60 minutes: 50 grams of Styrian Dana pellets (13.2% alpha acid)
Grain
- 7.5 kg Vienna Malt (55.5%)
- 4.00 kg Smoked Malt (29.6%)
- 1.50 kg Caramunich Type II (11.1%)
- 0.52 kg Cara Aroma (3.8%)
Mash schedule
- 60 minutes at 67.5º Celsius.
Yeast
- 4 packets of Fermentis S-23.
- Pitched at 12º Celsius.
- Primary fermentation 12º Celsius for 14 days.
- Secondary fermentation at 2º Celsius for 16 days.
