1.053 OG – 1.016 FG – 40 ibus – 5% abv. – 31 ebc – 60 minute boil – 100 liter batch size


  • Hops

  • 60 minutes: 100 grams of Styrian Dana pellets
  • 30 minutes: 40 grams of Styrian Goldings pellets
  • 10 minutes: 50 grams of Styrian Cardinal pellets
  • Whirlpool: 100 grams of Styrian Wolf pellets


  • Grain

  • 12 kg Maris Otter
  • 6 kg Pale
  • 2 kg Crystal 140
  • 1 kg Biscuit
  • 1 kg Flaked Barley


  • Mash schedule

  • Single infusion: 55 liters of water at 77º Celsius added to reach a mash temp of 68º Celsius.
  • Sparge with 80 liters of water at 77º Celsius.


  • Yeast

  • Fermentis S-04
  • 5 liter starter.
  • Pitched at 19º Celsius.
  • Primary fermentation lasted 14 days.
  • Secondary fermentation at 10º Celsius for 14 days.
  • Bottling aimed for 1.8 volumes of carbonation.
