1.038 OG – 1.010 FG – 30 ibus – 3.9% abv. – 48.7 ebc – 90 minute boil – 40 liter batch
Hops
- 75 minutes: 34 grams of Aurora pellets (8.25% alpha acid)
- 20 minutes: 32 grams of Cascade pellets (5.5% alpha acid)
- 10 minutes: 20 grams of Aurora pellets (8.25% alpha acid)
Grain
- Pils (75.6%)
- Crystal 60L (8.9%)
- Caramunich (8.9%)
- Carafa Special III (4.4%)
- Special B (2.2%)
- Belgian Sugar (1.9%)
Mash schedule
- 90 min – Alpha amylase rest: 64°Celsius (until full conversion)
- 15 min – Mash out: 75°Celsius
Yeast
- Fermentis US-05, 2 packets.
- Pitched at 21º Celsius.
- Primary fermentation 18-19º Celsius over 21 days.
- No secondary fermentation.
- Keg carbonation 0.8bar 15 days at 2°Celsius.
Water
- 50% RO, 50% Tap water
