1.060 OG – 1.016 FG – 15 ibus – 5.8% abv. – 8.5 ebc – 70 minute boil – 23 liter batch


  • Hops

  • 60 minutes: 18 grams of Northern Brewer pellets (7.6% alpha acid)


  • Grain

  • 3.60 kg Weyermann Pale Wheat Malt (65%)
  • 2.00 kg Weyermann Vienna Malt (35%)


  • Mash schedule

  • 5 min – Mash in: 23l = 30°Celsius
  • 30 min – Maltase rest: 7l of thick mash to 62°Celsius
  • 30 min – Glucose rest: return it to the pot for 40°C – 30 min
  • 30 min – Alpha amylase rest: 72°Celsius (until full conversion)
  • 10 min – Mash out: decoct 3l of thin mash, then return to the pot for 75-76°Celsius


  • Yeast

  • White Labs WLP 300
  • 2 liter starter used.
  • Pitched at 13º Celsius.
  • Primary fermentation 16.5º Celsius over 14 days.
  • No secondary fermentation.
  • Bottling aimed for 2.7 volumes of carbonation.


  • Water

  • Adjusted water: 39 ppm Calcium; 8 ppm Magnesium; 9 ppm Sodium; 45 ppm Sulfate, 40 ppm Chloride, 44 ppm HCO3.
